Sarah (6) and I made up this salad as a child friendly version of a Waldorf Salad. At the time the children didn’t like eating pieces of celery, but quite happily ate the tender young leaves. Gradually we increased the ratio of celery as they grew older.
SARAH’S APPLE SALAD
Ingredients
2 red or green apples, peeled and diced
2 tablespoons thick natural yogurt
2 tablespoons chopped mint
1/2 cup celery and young celery leaves (from the heart of the celery) chopped
1/4 cup roughly chopped almonds
Grated lemon zest and a squeeze of lemon juice to taste
Method
Mix all together and serve in a lettuce cup. It’s perfect with tacos! Serves 4 as a side salad.
If you let it stand for a few moments the mint and lemon zest have a chance to infuse the ‘dressing’
